Healthy Eats: Banana-Oat Griddle Cakes

These were inspired by a need to get carbs and a little protein to our muscles quick — whether to fuel our workouts or to refill the tank post-ride.
These whip up fast and go down easy — and are extra tasty with almond butter and honey on top.
You will need:
- 2 cups oats
- 2 very ripe bananas
- 1/4 cup plain yogurt
- 4 eggs
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch kosher salt
Combine all ingredients in a blender and mix until a smooth batter forms. Pour 1/4-cupfuls onto a hot griddle (set to 350 to 375 degrees) or cook in a nonstick skillet set over medium-high heat.
